Red cabbage is sold today 20-40% cheaper than white cabbage on the wholesale market. Usually red cabbage costs more expensive than white cabbage, but today its price is USD 0.3-0.34/kg comparing to USD 0.4-0.5/kg for white cabbage. The traditionally higher price of red cabbage is explained by the greater sales expenses, as this variety meets less demand than white cabbage, it is more difficult to sell this variety. The production cost of red and white cabbage is practically equal.
The demand on red cabbage is constantly growing; this commodity is included in the traditional vegetable assortment of any city market. However, as we see, it is not wise to overestimate the demand on this variety - it is limited much, as the consumers got used to eat white cabbage, plus the taste peculiarities of red cabbage do not let use it in many traditional meals. So the mark-up for red cabbage sales is considerably higher, and if the retail price on red and white cabbage is the same, the producer of red cabbage will profit less.
